BLT salad


Ingredients: mixed greens (or spinach), arugula, tomato, bacon crumbs, hard boiled egg, pickled onion, lemon maple vinaigrette.



For a light lunch for one mix about 3 cups of greens, 1 finely chopped tomato, 1/3 cup of bacon crumbs, 1 tablespoon of pickled onions, Add 1-2 hard boiled eggs.

Add 4 tablespoons of the lemon-maple vinaigrette (find in condiments) right before serving.
