Chicken fried rice - picky eater approved!

Ingredients: cauliflower rice, chicken breast, coconut aminos, ginger, sesame oil, egg.

Takes 15 minutes to make and toddler approved - doesn't get any better!
When in a hurry I always go to the fried rice idea. It's an easy thing to always have on hand (I have a big bag in my freezer at all times) and doesn't take much time to prep. Plus you can customize the flavor with spices so it's never gets boring. Just add your protein and you have a meal.
Saute chicken breast cut to 1" (2-3cm) cubes with salt, garlic powder, coconut aminos (enough to cover) and 1 teaspoon of ground ginger (or powder if you don't have fresh on hand) while pan frying the cauliflower rice with 1 tablespoon of ghee and 1 teaspoon of sesame oil. When I'm in a real rush I'll just add pre cooked chicken breast, as I typically have it in the fridge for cases like this - just remember to add some coconut aminos directly to the skillet.
When rice is slightly tender add the chicken with all the sauce. Once the chicken is cooked add egg (optional) and mix well.
