Chicken veggie nuggets - picky eater approved!

Ingredients: Chicken breast or thighs (boneless, skinless), carrots, broccoli, spinach, butternut squash, eggs, tapioca flour.


Kid friendly idea of the week: chicken veggie nuggets. 100% Paleo ready in 20 minutes and HUSBAND+KID APPROVED!

Combine your favorite/available veggies in a food processor - I used carrots, broccoli, spinach and butternut squash. Ended up with 2 cups of ground veggie mix. Remove to a bowl and add *cooked* chicken breast (or use ground) - about 1 cup. Add 2 eggs and half a cup of tapioca flour, season with your favorite spices - I used salt, pepper, sweet paprika, garlic powder. Make desired size nuggets and fry until golden brown on medium-low heat. Served here with Paleo ketchup and homemade hot mustard mayo (the recipe to which you can find separately).
