Endive boats with chicken-avocado salad


Ingredients: chicken breast, avocado, goji berries, pickled onion





For a light lunch or snack for two, use 4 large endive leaves. Dice cooked chicken breast (about 1 strip per person) add avocado cut to 1/2'' (1 cm) cubes, add a tablespoon of pickled onions and a tablespoon of goji berries. Mix half a squeezed lemon with a tablespoon of olive oil, add salt and pepper and mix well.

Season the salad, move to the endive leaves and enjoy!
