Fried zucchini

Ingredients: Zucchini, arrowroot powder.

Introducing fried zucchini - a Paleo version of one of my grandma's staples. I used to enjoy those in my childhood when in season, served with sour cream as one the many side dishes she had on the table. As usual this version is even more delicious than the original, mostly because the coating got really crunchy. I used those for a base for BLT for myself, and as a side for my husband's BLT wraps.
Cut zucchini in 1/4" (about 1/2 cm) thin slices, the shape depends on how you are planning to serve. If you plan to use those for a "sandwich" you can cut the zucchini diagonally creating a slightly longer piece. If you plan on serving as a side a small circle will do. Season with salt, pepper and garlic powder and lightly coat with arrowroot powder. Toss on a HOT skillet with avocado oil for about 2-3 minutes on each side until golden brown. The more brown the crunchier the coating is.
