Kid approved meatballs

Ingredients: Ground meat of choice, onion, sweet potato.



Quick lunch idea - sweet potato-beef meatballs with a green salad. My 4yr old is not a fan of salad, so he got his meatballs with cut veggies (he thankfully likes!) - tomatoes, avocado, pepper and cucumber :) To make these meatballs I used 2lbs (1kg) of ground beef, half a large onion (that I very finely chopped using food processor) and one small sweet potato I grated (using the finest grater). For seasoning I used dried parsley, garlic powder, salt, pepper. This version is pan fried on medium-high heat for about 15 minutes, turning each meatball so all the sides are cooked. The salad is the spring mix with some extra baby arugula leaves, half of avocado cut to large pieces, and my pickled onions with lemon-maple dressing.
