Oven baked pork chops with a side of riced veggies and roasted Broccoli and zucchini.

Ingredients: Bone in pork chops, riced veggies, broccoli, zucchini.



Another very quick dinner to make - pork chops. These ones are with the bone, but you can use boneless as well, simply adjust the temperature. For boneless 400F (200C) is enough, for bone in preheat oven to 450F (230C).


I have used veggie gravy here, but you don't have any on hand, season the chops with salt, pepper and garlic powder and put on a baking sheet. pop in the oven for 25 minutes and flip once halfway. If you are adding gravy use an oven safe dish.


I will post the recipe for the gravy separately, but in a nutshell it's made out of a variety of sauteed veggies with cherry wine. You can use it on top of your Thanksgiving turkey or as a sauce for beef stew - very useful to have in your freezer.


Once the chops are in cut the broccoli and the zuchinni your favorite way. I take out most of the broccoli stems, and make the zucchini larger as it gets soft really fast. Move to a bowl or into a ziploc bag and season with salt pepper garlic and/or onion powder and thyme, add 1/4 cup of olive oil and mix well. Move to baking sheet and put on the lower rack in the oven.

Use a pan to fry the riced veggies with tablespoon of ghee and your seasoning of choice. I didn't add much here as I had the gravy on the chops.


Veggies should be ready when the chops are, serve and enjoy!
