Oven baked Salmon, mashed parsnips and wilted greens


Ingredients: salmon, parsnips, ghee, garlic, white wine, greens



Salmon is so easy to make, so we enjoy it quite often.

I typically ask the fish guy (or girl!) at the store to cut it for me so it's less messy do deal with at home. I pick one large piece and I get 4 5-6 oz (140-170 grams) pieces, so I have 2 meals covered. Just throw on a baking sheet and season with salt, pepper and garlic powder. Sometimes I add some maple and chili spice, or fresh rosemary, sage or thyme.

I bake on 400F (200c) for 20 minutes as we don't like it too dry.


Peel the parsnips and cut to 1'' (2 cm) pieces and boil until soft in salted water. Leave a little bit of water in and add 2 tablespoons of ghee and some garlic powder and fresh ground pepper if you like. Using a hand blender mash until smooth.


Wash your greens of choice. I love kale, chard, baby bok choy or broccolini. Mash one garlic clove and simmer on a heated skillet with a tablespoon of ghee for about a minute. Add half a cup of white wine, throw the greensin and cover. Leave on low-medium heat for about 3 minutes.


Put your plate together and serve!
