Pan fried chicken thighs with a mixed greens salad.

Ingredients: One large red onion, boneless skinless chicken thighs mixed greens.

This is the quickest most delicious meal you can make in under 15 minutes.
Cut one onion into half then make thick wedges. In a ziploc bag combine the onion wedges and the chicken. In a bowl mix one cup olive oil and salt, pepper, garlic powder and sweet paprika. Add to the ziploc bag and seal. Shake the bag to mix everything. Make sure the chicken is very well covered with spices.
On a preheated skillet sear the chicken thighs on both sides, add the rest of the onion and the oil that's left in the bag and cover. Cook on medium heat for 10 minutes.
Meanwhile wash and dry greens. In this case I had cooked beets and pickled onions in the fridge. I cut the beets to cubes, added about a tablespoon of pickled onions and mixed with 2 tablespoons of my maple vinaigrette. If you don't have a dressing ready you can make one quickly by squeezing a lemon into 1/4 cup olive oil and adding some maple syrup or coconut sugar (about a tablespoon, but definitely adjust to your taste).
Once chicken is ready, put next to salad and enjoy!
