Tuna salad sliders


Ingredients: one large sweet potato, 1 can of tuna, half a red/yellow bell pepper, 2 celery ribs, red onion, capers, mayo, hot mustard.




For a meal for two I use I huge sweet potato (my favorite is always the white Hannah sweet potato). I end up with 5-6 mini sandwiches - 2 for me, 3-4 for my husband.


Cut the sweet potato to 1/2'' (1 cm) diagonally to create larger pieces. Line on a baking sheet and spray with some oil (I have spray bottle with olive oil that I use for roasting veggies). Add salt, pepper and garlic powder. Bake on 350F (180C) for about 40 minutes.


Meanwhile VERY finely chop the celery, pepper and the onion. I like to cut very thin long pieces first, then when cutting crosswise you don't have to try too hard to make them too thin.





Mix the veggies with the tuna. Add one tablespoon of your homemade mayo and two tablespoons of hot yellow mustard. Add salt, pepper,



When the sweet potatoes are ready let them cool for about 5 minutes. Then put your sandwiches together.

I garnished with some cilantro for the look, but it turned out to be the perfect addition of flavor here.
